North Culinary Arts Team Earns Third Place at the WI State ProStart

Twenty-three schools and over 100 high school students recently put their culinary and management skills to the test in the ProStart® Invitational at the Wisconsin Restaurant Expo.

For the Culinary Competition, students had one hour to prepare a three-course meal. Foodservice industry professionals and college educators judged students on teamwork, presentation, cooking procedures, knife skills and sanitation.

Members of the Sheboygan North team who won the third place trophy and over $12,000 each in scholarships from state and private post-secondary schools were juniors Derek Klockow, Hunter Lewis and Kyle Mares and senior Mai Soua Chang. The team presented a comfort food menu featuring local Wisconsin products:

Starter - Mushroom Herb Crepe Napoleon With Tomato Pepper Corn Relish
Entrée - Smoked Pork Tenderloin with Bourbon-Rosemary Sauce, Maple Chipotle Sweet Potatoes, Shallot and Garlic Green Beans
Dessert - White Chocolate Lemon Mousse on a Gingersnap Crust, Candied Cranberries, Cranberry Syrup and White Chocolate Shard Garnish

Local Wisconsin products used by North's culinary team included Sargento and Sartori Cheeses, Nueske's Bacon, Capitol Brewery Wisconsin Amber Beer, Kikkoman Soy Sauce, Crystal Farms Butter, Roth Wisconsin Maple Syrup, Ambrosia White Chocolate, Habelman Bros. Company Cranberries, and Penzeys Spices.

Members of the North High School ProStart® Management Team who also participated in the competition that day were David Callahan, Bee Lee, Chong Lee and Justin Siburt. In the management competition, students had to demonstrate their knowledge of the hospitality industry by developing a business proposal for a new restaurant concept. The proposal included written and oral presentations, as well as a visual display. Their restaurant concept, Costa del Sol, featured seafood with flavors from the Caribbean.

The ProStart® Invitational is a showcase of the young talent in Wisconsin's growing foodservice industry. Over $1 million in scholarships was awarded to competitors. The winning team in each of the two competitions are going on to compete in the National ProStart® Invitational.
