Twenty-nine schools and 147 high school students across the state put their culinary and management skills to the test in the ProStart® Invitational at the Wisconsin Restaurant Association Expo on Tuesday, March 12, 2013. Sheboygan North High School students placed in the top three culinary teams at the competition. NHS senior Shawna Anderson tied for first place in the individual knife skills competition with over 100 competitors.
Shawna Anderson, Kelsie Fowler, Megan Hanson and Pader Xiong made up the Sheboygan North team who won the third place trophy as well as over $12,000. each in scholarships from state and private post-secondary schools. The team presented 'Fresh and Fit Cuisine' including thirteen different recipes. The menu included: Starter
- Fresh Spring Roll, Sweet and Hot Chili Dipping Sauce and Sesame Vegetable Relish.Entree
- Tea Smoked Chicken Breast with Star Anise Orange Sauce, Coconut Couscous Pilaf, and Sugar Snap Peas with Carrots and Red Bell PeppersDessert
- Vanilla Bean Sponge Cake, Zesty Strawberry Filling, Sweetened Whipped Cream, Strawberry Coulis, Chocolate Sauce with Fresh Berry and Roasted, Salted Pistachios garnish.
The students had to prepare their three-course meal in one hour on two portable butane burners. No battery operated devices or other fuel sources are allowed. Students were judged on teamwork, presentation, cooking procedures, knife skills and sanitation by food service industry professionals and college educators. In addition, all teams were required to submit all of their recipes, the ingredients costs, portion cost for each recipe and determine a menu price for each course based on a 33% food cost percentage. All paperwork was due when they checked their food items in with the judges for correct safe temperatures before the competition began.
Adviser/instructor for the team was Connie Check. Chef Benjamin Sommerfeldt, Sous Chef, Lola’s on the Lake, The Osthoff Resort assisted in mentoring the team.
The ProStart Invitational is a showcase of the young talent in Wisconsin’s growing food service industry. Over $1 million in scholarships was awarded to competitors. The winning team in each of the two competitions are going on to compete in the National ProStart® Invitational in Baltimore, MD April 19 - 21.
